Expensive, but you get what you pay for
This is very tasty stuff, and it's both addictive and expensive. It is light, sweet and tangy, a light syrupy viscosity, that always elicits positive comments whenever I serve it as part of a salad dressing. Few people have previously tasted anything like it, so it comes on like a pleasant shock when guests first encounter the taste. It lends itself to many other uses, most of which are not foreseeable until you have a bottle laying around the pantry. The only question I ask myself is how we managed to use up 32 ounces of white balsamic within so short a time. I learned from experience to let the vinegar be the star, by itself, paired at a ratio of 1:2 with good quality olive oil. I sometimes go 1:1 because the flavor is so subtle (not vinegary) that a larger amount of olive oil is not nesessary. People seem to comment most often at about those ratios. When you begin to add other tastes (garlic, cumin, herbs), as you might in other vinegar and oil dressings, you begin to mask the simple flavor that brings the most favorable comments. This vinegar IS the taste you're looking for. Adding anything other than salt and maybe pepper kills the light and tangy flavor you're looking for. If you buy one bottle, you'll buy another, and another, which is why I mention the price.

Great gourmet peach vinegar
I am really happy with the light texture and great peach flavor. I was a little worried this vinegar might be too fruity or flowery, or too viscose, but it’s just right. The aromatic peach tangy taste and light texture, when mixed with olive oil, is the perfect compliment to my favorite salad - arugula, tomatoes, red pepper, avocado, toasted almonds, and fruit such as blueberries or mandarin oranges. Yum! Out of this world.

The taste of peaches
This is really delicious. I pour a tablespoon or two over a salad containing a sliced peach along with the same amount of Olive oil.

Excellent quality and well packaged
If you watch his youtube channel then you know this balsamic is excellent. I have used for Caprese and Salad dressing. It is “amazing”. Competitively priced and good value for the money. Shipping and packaging was also excellent ensuring no breakage.

Artificial Taste.
The taste/flavor profile is artificial, disappointing, almost medicinal in taste. I have been buying these products for years, but I can no longer recommend the oils and vinegars.

Mix it with Pellegrino ;)
Mixing Peach Balsamic with Pellegrino was recommended by a friend... the ratio may vary depending on your taste... I like mixing 1 1/2 T of the Peach Balsamic with about 1 Cup Pellegrino... so tasty... be sure to add lots of ice and stir... yummy. I've introduced this to a few of my friends as well... they too are now hooked on this tasty drink. I am using about one bottle every two weeks... yes, I drink it every day! My next plan is to grill some peaches, dice them up and add the Peach Balsamic to them and then spoon over vanilla ice cream... sounds yummy right? Enjoy ;)))

Vinegars, gourmet foods
WOW!! This balsamic vinegar is so desperately good!! Chef Jean Pierre makes vinegars in different flavors and I haven't found one that I don't like. The vinegars are excellent as part of a meat marinade, on game meat to take out the gamey taste, and (of course) on salads. It doesn't take a lot, either. Wish I could give this vinegar more than five stars.

Pretty good.
I like the flavor of this okay --- but I have to say the similar stuff I've been buying at a local store is a bit better and the price is the same.
