I just cook with that. You may be talking about an aluminum insert, but I don't use an insert. There is aluminum in the bottom of the pot for even heat distribution but the food cannot contact that aluminum because it is covered by stainless steel. **Q: will this pressure cooker work on an induction cooktop?** A: The original version had a thick aluminum bottom, and would not work on an induction cooktop. However, the newer model sandwiches the aluminum within the stainless steel shell of the pan, and thus should work great on an induction cooktop. **Q: How many pressure settings does it have?** A: There is an excellent pressure regulator on top with two (2) settings ... Most of the recipes seem to call for low or high for certain amounts of time....and it works nicely.....this cooker is excellent **Q: If you had $200 would you buy this same pressure cooker or upgrade to an electric pressure cooker in the same price range?
