A mellow Stilton.
I have to admit most Stilton cheese I’ve had has been very sharp and very tangy. But I was pleasantly surprised when I tasted this particular brand of Stilton. It was very mellow very subtle. I actually very much enjoyed it with a very good Single barrel malt whiskey this evening. I guess my question would be I have 2 1/2 wedges left, if they are aged longer will they become a bit more sharp? While I like the mellow flavor I would really like just a little bit more sharpness.
