**Q: How does the flavor compare to the original 19g net carbs per 100g Carbalose version in the mylar bags?**
A: They are the same thing just in different size amounts in packages. The taste is the same. This flower is about 1/3 of the net carbs as regular white flour. So a slice of regular white bread that is 18 carbs compares to a slice of Carbalose white bread having one third of that amount or about six carbs per slice.

**Q: Is it good for making pasta??**
A: I’ve made pasta with it (1 egg for every 100g of flour) and it tastes great to me. I have always eaten it with sauce though. Texture is pretty close to regular pasta also.

**Q: can I make bagels with this flour?**
A: I haven’t try bagels but I substitute carbalose flour for all purpose flour and it works all the time. It even works better if you sift it.

**Q: What is the difference between this and carb quik**
A: Carbalose is like flour, and Carbquick is like Biquick.

Good stuff....great to make lower carb pastas and other foods

When I opened the bag and smelled the flour, it smelled like the canola oil had gone a bit rancid. Some of that smell stayed in the flour even when it was cooked. But it wasn't so bad that I couldn't tolerate flour tortillas made from it. In fact, homemade tortillas with carbalose were significantly better than any store-bought low-carb flour tortillas I've tried. The package is definitely right about doubling the leavening. My tortillas barely puffed up at all when cooking them. Also, the flour is a bit salty, so you might want to use less salt than the recipe calls for when cooking with it (especially if you're doubling the baking powder, which is also salty). And the flour didn't seem to naturally form layers when kneaded with water and fat, so it might not work so well for pastry. This is a decent product. But I think I'll be trying the King Arthur low-carb flour or looking for a fresher source of carbalose before buying again.
