How many mm thick is the CX white bar tape?

It's probably no thicker than 2mm. It's very soft and cushioned once it's wrapped around the bars. It's enough tape to wrap my T2 Wing base bar and aero bars.

Was curious, does anyone know what the "service course" is in reference to?

Service course /servizio corse is a term used to refer to the name of the workshop of a racing team. It is now often a marketing word used to suggest the idea that a product is identical or of the same quality as used by the pro teams. I really like this tape. It's grippy and comfortable but not overly padded. Very durable as well.

Im looking at the red tape, it only shows one roll in the picture for $20.98, is that enough for the whole handlebar or do I need to buy 2? Thanks.

The box has 2 rolls, 2 bar end caps and a little bit of zipp tape. It's definitely more than enough. The adhesive side isn't too sticky so you can unwrap and start over.

Does the CX black version have gel in it as well?

It's squishy and thick. Instead of adhesive, it uses a sticky gel. It feels thick
