Will there be finer stones available?

The grits marked on the plates are about 1/3 of their equal "stones". For example, the 220 grit is equal to a 600 grit stone. If you look at the plates available now in 2022, there is no need for higher grits, you can mirror polish with those plates.

What is the minimum and maximum lengths of knives that can be sharpened?

Because you clamp the blades into the clamp jaws, you are free to adjust as needed to accommodate a wide range of blade styles and sizes.
