Does this product dehydrate eggs ?

I am sure that it does, BUT..... I have not done so as my understanding is that it is not considered safe. But again...... I know several people who dehydrate eggs often. It's up to you. This machine does everything that any other dehydrator will do.

Shuts off automatically?

Yeah. You set the time and it shuts off after that time expires.

Has the tray issue of them not fitting properly and staying in place been addressed?

I have never had trays not fit and they stay in place fine.

Do they sell more if the mesh screens?

I don't have any reason to buy more of the metal screens. Came with 10. I did buy some silicon mesh sheets that are wonderful preventing items sticking to the metal screens and small items from falling through. You can cut them to fit. I hope this helps.
