## Overview

Moser Tirolinger Speck is a 6-pound boneless Italian ham, dry-cured with a unique blend of juniper and bay leaves, then gently smoked and aged to perfection. Originating from the Italian Alps since the 1970s, this speck offers a deeper, more intense flavor than prosciutto, is shelf-stable, and prized by food connoisseurs for its artisanal quality and refined taste.

## Description

It all began in the 1970s, when Walter and Adolf Moser started to produce speck from their farm for family and friends. A year later, the brothers opened their company in Plaus, near Naturns/Naturno. And today, the second generation is carrying on the work. The special feature of the Moser family’s speck is the gentle smoking process. There is a growing preference amongst consumers for a less smoky speck, and it is precisely here that Moser differs from other producers. Moser’s competition is not the other Speck Alto Adige manufacturers, but the companies which produce cured hams. Moser produce three lines of speck: Speck Alto Adige PGI, “Moser Speck” and “Premium Number 1 Speck.” For some time now, they have also been producing a limited quantity of Speck Alto Adige from Parma ham pork thighs. These are larger than the standard size and the minimum curing period, at 8 months, is correspondingly longer. The limited quantity produced is extremely popular with gourmands and is sold instantly. “Turbo-boosted Speck Alto Adige,” the Moser family call it. The family’s line of organic Speck Alto Adige is also an interesting addition to their array: All the meat for this product is sourced exclusively from organic farms. Review: Delightful, especially if you have a friend who owns a slicing machine :-) - I had this on my to buy list for quite a while. I finally bought it in May '22. There happened to be a coupon offer on it at the time. I lived in Italy for a while, and love San Danieli prosciutto, and many other Italian pork products. I've also lived in Germany, and am also a big fan of closely related German hams, so I had a very good idea of what I was going to be getting. The product arrived quickly and in perfect shape. At the time of purchase, the hams were advertised as being 5 lbs on average. The one I got was 5.7 lbs, which made it an even better buy. Since it is smoked and shelf stable, I stashed it my refrigerator, and did not actually start enjoying it until August. The flavor is excellent. I have an extensive set of knives, and so for me slicing it is not a major issue. However, getting large thin slices is a challenge, and I think this product is even more enjoyable when you can in fact slice it very thinly. Perhaps I will get better at it the more I practice. That is a happy thought. I have rarely wished that I had a slicing machine, but it would be much easier to generate consistently thin slices if I did own one. If I knew someone who worked in a deli I would bribe them to slice it for me. :-) I do really enjoy the flavor and the texture. It takes me back to the Bavarian Alps where local shops sell the German version of this, a product that I greatly enjoy. I am working my way through it. It is very flavorful, and a small amount goes a long way. As others have suggested, a thin slice atop warm bread, toasted or grilled, is a delight. I have also julienned some of the thicker slices and added them to plain cooked pasta, and it adds a great deal of flavor. If you bake pizzas at home, topping them with thinly sliced or julienned Speck after they come out of the oven is an interesting alternative to bacon, sausage, or ham. The idea is to merely warm the Speck and avoid cooking it. I'm pondering the addition of diced Speck to pea, lentil, and bean soups just before serving, or offering a dish of the Speck so that friends can add it or choose not to. Baked potatoes with diced pieces of Speck? The more you think about it, the more ways of using this product come to mind. I'm enjoying the product, and highly recommend it. When I am finished with it, I will most certainly be happy to buy this product again.
Review: Very tasty, great value - This is really tasty Speck, just as I know it from Germany. The smell alone is heavenly. It's a big chunk, I cut mine into 3 pieces and vacsealed/froze two, we're already done with one part, will be slicing some of part two today. It really helps to have access to a meat slicer, but a very sharp knife and some skills will also get you very thin slices. I like my Speck so thin that you can look through it, easy task with a slicing machine, a budget one will do just fine for years. This Speck with some very good German style bread and good butter is just wonderful, I will certainly buy this again. Pay attention to the delivery date, it does get shipped in an insulated box with icepack but that had melted by the time it got to me. Everything was still cool, and it's no problem, since this is shelf stable w/o cooling, but it's best to not have it sit in a hot truck or warehouse on a hot summer weekend. This is a big piece of Speck, so also ideal to buy together with friends and family and divide after delivery. I'll be checking out what other tasty things this vendor offers.

## Features

- 6 lbs - WEIGHT VARIES PER PEICE. As we are not able to sell by the exact weight we do our best to ship as close as we can to the advertised weight. Each piece will vary in total weight.
- Speck is a cured, lightly smoked ham. Although a close cousin to prosciutto di parma, speck is worthy of its own distinction when it comes to cured hams.
- Speck is boned out before being rubbed down with a cure laced with spices like juniper and bay leaves. Then it is smoked and aged. That spiced cure gives speck a deeper taste that's more intense than prosciutto di Parma.
- USDA KNOWLEDGE ARTICLE Dry-cured hams are shelf stable. These uncooked hams are safe when stored at room temperature because they contain so little water that bacteria can't multiply in them. In dry curing - the process used to make country hams and prosciutto, fresh meat is rubbed with a dry-cure mixture of salt and other ingredients.
- PLEASE READ BEFORE PURCHASING: This product will be cooled through most of its journey with ice packs in an insulated container. The ice packs may melt during shipping however rest assured the product is dry cured. We recommend putting the product in the refrigerator when it arrives.

## Questions & Answers

**Q: How do you prepare this?**
A: Slice and eat like a prosciutto.

**Q: Are you selling it by the pound or is it possible that I pay the same price for 4,25 or 5.75 pounds (+/- 0.75 pound)? Thanks**
A: Good day valued customer. Unfortunately Amazon doesn't not allow us to charge by the lb. but i can assure you the average of all the pieces we sell on Amazon is 5 lbs. So you may get a piece one time under 5 lbs and then another time over 5 lbs

**Q: Do you cook this**
A: Not usually. It is meant to be sliced and eaten as such, but sometimes it is used as an addition to cooking (like pancetta or bacon)

**Q: Does this contain sage, rosemary, nutmeg or ginger spices?**
A: No

### ⭐⭐⭐⭐⭐ Great taste but the weight is not 6 lbs it is 5 lbs +/- (updated)
*by C***. on January 9, 2023*

Excellent taste, just what I expected. I grew up in Europe and always enjoyed this type of smoked meat. I initially submitted the reviews below because of the wrong weight. That is still correct. I have reported this to Amazon and assume this is some mistake most likely outside of the sellers responsibility. The weight is 5 lbs +/- not 6 as stated on the website. I have not tried the meat yet. This is only about pricing. This is advertised as approximately 6 lbs for $88.95, what I received was 4.6 lbs for $88.95. That is about 30% more expensive than advertised. 4.6 lbs is NOT approximately 6lbs. If there is such a great variance in weight then I expect to be charge on a per pound basis and not for the full 6 lbs. Update: Adding to my disappointment, he same Speck is sold on Amazon with the correct description for $10 less. DO NOT BUY FROM THIS SOURCE! Buy from the correctly advertised source -Alma Gourmet Store.
