Long probe is nice.
I like the long probe but I wouldn't call it an "instant" read as it took about 35-45 seconds to work it's way up in temp when I used it to read the temperature of my meatloaf. It does seem to be pretty accurate but I haven't used it yet for the reason I bought it and that was to make icing that requires boiling sugar water to hard ball.

Unreliable.
What a disappointing piece of garbage. Where do I begin? Calling this an "instant thermometer" is like calling two sticks an "instant fire starter." It often takes minutes for the readout to stabilize at a temperature, longer than my old cheap analog thermometer. And even once it appears to have decided on a temperature, if you remove it from the meat, let it cool down, and insert it again in the precisely same location, it will give you a wildly different reading (+/-30F). If you are buying this because you truly care about reaching the minimum cook temps on meats set by the FDA, you would be better off just plain guessing. I'm going back to the Weber 6492. Even with durability problems, at least it works out of the box.Furthermore, after a few uses the buttons got sticky and the display will frequently black out or change modes without a button being depressed. Piece. Of. Crapola.

Not an instant read.
This is not an instant read thermometer. Fine. But it takes over thirty seconds (sometimes more!) to climb up to "cooked meat" temperature. If this thermometer lasts me a year, I'll come back and add a star.
