Q: 2 Qs: 1) Do they have Teflon coating? 2) I notice that it says aluminum inside. Where? between stainless steel? Or am I cooking ON aluminum??

There is no Teflon. The aluminum inside is between a layer of stainless steel on the outside bottom of them and a layer of stainless steel on the inside bottom. In other words, if you cut the pot/pan in half, you would see three layers at the bottom, the 2 layers of stainless steel sandwiching a layer of aluminum. This is very common practice so you get the benefits of a stainless steel cooking surface with the even heat conduction of aluminum.
