Since the hand guard is only half the length of the zucchini, only the part of the zucchini that is under the hand guard gets cut. I just turned the zucchini around every few slices to even it out and do the other half, but I didn't get any slices as long as the zucchini. It slices so thin, though, that the zucchini is delicious. I hand jullienned the slices for "pasta". **Q: does this work well on potatoes? I want to make oven chips.** A: Yes. It is awesome! Use the #2 or #3 setting. When you get close to the end USE THE HOLDER!!! This is a razor blade. People who report slicing fingers were foolish. When I was done slicing a potato I had two dime size nubs left. One from the start and one from the end. If you want longer chips slice on the bias/45° angle. Be careful and USE THE HOLDER!!! **Q: how thick does it cut?** A: it has 3 settings. The first setting is paper thin, about 1/16. Second setting is 1/8 inch thick and the third setting is about 3/16 inch thick. **Q: How does this compare to the cheaper Oxo mandolin? Is it more durable and does it cut better?** A: They are both alike at first look, however, it seems to me that the cheaper mandolin is made of thinner plastic and the slicing blade is also thinner. I find this mandolin to be more durable and and cuts better because of the thickness of both the plastic and the blade. I'm not sure why people are so surprised they can cut themselves when they use this - it's literally a tool for slicing vegetables quickly and easily, it should be obvious that if it cuts a vegetable it will cut your hand. That being said, it's a really good slicer for its price. The thickness options are good and easy to change between, the thinnest is thinner than I expected given theres only 3 options, and its ridiculously easy to clean.
