Q: Will this product protect electronics from coronal mass ejections or electromagnetic pulses?

That's harder to answer than most realize. In reality these are ESD bags to protect from Electrostatic Discharge. The electrons or lack of them are distributed along the package and help prevent them from getting to the items inside so you have to make sure you are discharged/same potential before removing the items. When it comes to EMP and CME you are dealing with different effects, these could help as an inner layer and should be used for static (triboelectricity). This is just the first step and there are other steps to protect and how to do that is more extensive than putting what you want in a ESD bag then putting that bag in a metal box. For CME anything plugged in is at risk some things unplugged are also or will have upsets. For EMP anything plugged, unplugged, and everything not protected is at risk. Get the EDS bags then research how to protect from lighting and CME and you should be good. Maybe install a whole house surge protection.

Q: would this protect a access key fob from being demagnetized? If not, does anyone know what will? Thank you.

These are anti-static bags, not anti-magnetic. the only thing I can think of to protect from magnetism is a lead lined box.

Q: Will this fit a full atx motherboard?

A full size motherboard is 12" x 9.6" - So, technically it should fit in this bag. Usually anti-static motherboard bags are sold as 12" x 16", but the .2" on this bag isn't significant enough for most motherboards. However, do be aware that motherboards can vary greatly in bulk due to heat sinks and so on. So it may be a snug fit for some of the bulkier boards. But most should fit fine.

Q: Can i use this static bags to prevent reading on the tag-devices from e-zpass tolls?

Probably with high reliability. There are reports of EZ-Passes being received by 'customers' with charges already on them, due to the envelope being transported through toll booths. So EZ-Passes are now usually shipped in anti-static bags.
