This has been true since time immemorial, and it is still true. Whether this company has added some additional special process of fermentation (I doubt it), or whether they are simply capitalizing on the public's interest in fermented products by pointing out the way cocoa/chocolate is made by EVERYBODY, I don't know. I will say this is an especially delicious cocoa, however. **Q: Where is this originally manufactured ?** A: The Organic Fermented Cacao ingredient was manufactured in Peru and the finished product was packaged at our facility in the US. **Q: So, the cacao is not roasted?** A: No, it is not roasted.
