do you think this will be better to use in a ice cream shop verse the spring ones l. What i want is a scoop that gives me scoop up a lot of cream per cup

i think this would do well in an ice cream shop. you may want to educate your staff that this scoop has an internal liquid that functions off of heat - so keeping/dipping it in a cup of water between servings (or even shaking it with your hands just before use) will keep it warm and make scooping easier. i like that this serves nice rounded scoops and i suppose as long as you keep pulling you can make as large a scoop as you want.

Which size is best to make the biggest scoops that still fit commonly-available sugar cones?

In my opinion (and I tried out a couple) the best size for cones is the gold one, I think it's the 2 ounce one.
