How do I keep it from going gummy?

Accepted Answer

Plenty of water, a proper rolling boil before the pasta goes in, and a stir in the first minute. Don't rinse after draining — that surface starch is what helps sauce hold. Dress it straight away, while it's hot.

Why does sauce stick to it so well?

Three things. The bronze die leaves a rough, porous surface instead of a slick one. The spiral gives sauce a groove to sit in. And the tube is hollow, so sauce ends up inside it as well as around it.

Is this really whole wheat? It looks lighter than other whole wheat pasta.

Yes. Ancient Sicilian durum is naturally golden, not brown — the deep brown of most whole wheat pasta comes from a different variety of wheat entirely. Ours is stone-milled, preserving the whole wheat berry.

Because it is not reconstructed. Refined flour has the wheat germ stripped out for shelf life and the vitamins added back in a factory. The germ stays in this flour, so there is nothing to replace.

Each harvest is a little different, and it's bagged as it comes in. Shade and flavour shift slightly from one crop to the next. That is what one farm, one town and one crop a year looks like.
