What are the differences between the Swissmar V7000 and the Swissmar V1001?  Any recommendations?

I've had a Borner mandoline slicer for 20 years. It was finally wearing out so when I saw a demo at a home show, I bought a new one. Turns out the one I bought is the 7000 model, and the one I replaced is the 1001 model. The huge difference I noticed when I got home is that the 7000 is poorly designed to sit on the counter, no matter what improvements it might have over the 1001. My 1001 and all its gadgets lives in the provided plastic rectangular box which sits, well balanced, on my countertop. Use it, rinse it, replace it. Simple. Takes up 5" by 2" footprint, and self-balances upright. The 7000, by contrast, has a clumsy, detachable Y-shaped blade housing that "snaps" on the back of the mandoline itself when not in use, and which must then be unsnapped from the mandoline before each use. So rather than one compact unit, I have two plastic devices that can easily become separated in a drawer, unless I want to go through the process of attaching and  re-attaching this rube goldberg blade holder each time I use the machine.  I suppose some design engineer thought they were making an improvement, but now this machine is overly cumbersome to use and can't live on my countertop as before. To make matters worse, there's no attempt to design any kind of hang point, so I can't even hang the device on the wall. Overall, this is a deal-killer for me. The 7000 has an adjustable depth setting  (3 settings) whereas the 1001 uses two different sized plates for thick or thin (two settings) but what's the difference if the machine is in a drawer somewhere rather than beside me while I work, and the blades are hiding under all the other useless gadgets I've bought over the years. I'm putting this one for sale on Amazon and buying another V1001.

Hi! Could someone please tell me how I should be placing the safety holder on non-round items? I'm trying to julienne zucchini.

I find the safety holder a pain. Buy a good cut glove and do it by hand. Without the glove, it will eventually cut you, and you'll remember it.

Question 3

How thick does this slice. I need to slice apples, sweet potatos, etc about 1/2 in. thick for dog treats.

You can cut slices either 3.5 mm (approximately 1/8) or 7 mm (slightly over 1/4") thick. There are two julienne blades, 3.5 mm and 7 mm wide.

is this mandoline just like the v-1001 but with a container?

Hi! I just looked at the picture of the v-1001 and yes, as far as I can tell, it is identical (except the 1001 doesn't seem to have the container.)
