Do you HAVE to use cartridges, or can you use free ink? And if so, where do you buy additional cartridges?

You do not "have" to use cartridges. There is a bladder converter included. You can fill this in one of two ways, you can dip it into ink and squeeze the converter, let it expand to suck in the ink. The other way, which I use, is to have a syringe. Fill the syringe with ink, then use that to fill the converter. It's up to you. I also use the syringe method to refill the cartridges.

It appears as though these nibs are of a gold tone, is this in fact the case?

Yes, they are yellow/gold in color, but they are made of brass.

Does it have letter making guide our instructions?

An instruction booklet comes in the package.
