With the video output - if I film a large video will it break it into chunks, or will it store it as one long video?

The first info in the other comment is correct, the last sentence seems to directly contradict it. When what you're filming reaches a certain file size, the video camera will close out the current file and create a new one and keep filming. Windows Explorer shows the maximum file size as being around 3.7 GB.  With a 4K setting, that was about 8:25 minutes. At 2K, it was about 10:06.  Your mileage may vary depending on how much actual activity occurs in the video. To put files together, ActionDirector is mentioned by others. I haven't tried that yet. Note that various posters also indicate that basic stitching of actual 360 footage when saving the files to a Samsung phone is superior to copying the raw file to a PC and using ActionDirector to stitch it.

Can you plug this thing in a power outlet or a USB port and leave it on 24hrs/day 7 days/week?

It may not be the intended use for this camera. If does allow to have continuous recording if that is what you are looking for. In order to achieve it, the camera deletes the oldest files so you better get a large size memory card. About power, you can do that but you may kill the internal battery since no battery is capable to deal with a constant charging status. Since the battery is not removable, again, I would not recommend to do that. Unless using some sort of auto-disconnect system for that usb charging cable, like a "safegard" charger protector(sold by YYGift) or a usb cable with auto-disconnecting +checking charge like MCDODO cable. This way you will not damage your battery by overcharging it. Another issue you would have to think about is that over just a couple of days, your camera may get dust or other issues on the lenses depending on the environment. Also, depending on the settings and local temperature, the camera may overheat and stop recording. Therefore, depending on your needs, a trophy cam may be a better option; it does not provide 360 recording but they are made to endure longtime at the field.

One potential issue where I'm going to do more testing. On my first day of use, it was 90 degrees out and I started experiencing overheating shutdowns after about 30 minutes of use. Naturally, I was waiting to film a train, and one of these occurred just as it was approaching and I lost a critical 10 seconds restarting the recording. Today it was 85 out and I tried 4K and 2K recording of a soccer game to see if overheating occurred. But this time, I carefully made sure the camera was not using Bluetooth to send live video to the phone the entire time. I was hoping that part of the heat buildup was caused by constant streaming from the cam to my phone across about 30 feet via Bluetooth.  I was able to record 55 minutes at 2K and 28 at 4K without overheating problems. So it may be that watching the video via Bluetooth as it is being recorded is not great in high temperatures.  This is just an hypothesis. Others reported that using a slow-rated micro SD card can cause overheating, which makes sense. But I'm using a Samsung 128 GB card designed for 4K recording. The original response is correct, you can definitely start and stop recording from a phone via Bluetooth (for compatible Samsung phones). But then sitting and watching it on your phone might be problematic under specific circumstances.
