Q: How does this improve over the stock Breville portafilter? Why not just unscrew the double spout and use the stock portafilter spoutless?

The bottomless portafilter's main role is to hone in your shot. It allows you to see how the shot is formed and dispensed. Basically to help you eliminate channeling. That being said I use it all the time for two reasons. 1) The shot, once dialed in, forms toward the center and flows directly into the cup. In the Breville portafilter, even with the double spout removed, coffee will likely flow onto the metal bottom and then into the cup. 2) It is easy to clean! After knocking out the puck, I just put it under the sink sprayer, top & bottom, shake, hold up to light, and its easy to see if the holes are all clean.
