can I use this for scented wax cubes?

Yes you can. When the scent is gone put it in the freezer for an hour or so and the wax will slid off.

Does anyone actually put water in it when using wax melts?

I don't put water in mine it would dillut the smell and it all melts away when finish so you don't need the water for easier cleaning or anything.

Can you use this for loose herb incense?

No, I don’t think it would be safe
