For "GranFruttato", indeed, Zefferino Monini selects only oils from slightly earlier harvested olives: they are slightly unripe, so that we extract a lower percentage of oil, but richer in antioxidants (polyphenols) that give stability and enhance the vitality of perfume and fragrances.
