Wire strong enough if I swap out grate for my own cast iron grate?

I wouldn't trust it... if you're going to add your own cast iron grate it's not going to take that much longer to put bigger wire on it just to be safe

Is there a trick to getting the lifting screws screwed into the grate portion on the Santa Maria attachment?

I found no issues with the instructions for attaching the lifting screws to the lifting cable at the attachment points of the metal ring that holds the removable (for cleaning) cooking grate. Afterwards I did have to remove excess cable from each side.
