if my amp is a 2 channel 8ohm would I want a 8 or a 4ohm sub?

Depends on what else you have attached to the amp, crossovers and tweeters and such. And how many of these are you going to use per channel?

Would this speaker be able to handle 50w ?

The power handling is 30 watts rms and 60 watts peak. It's a small speaker so running 50 watts max per speaker would be fine, but 50 watts rms the speaker may not last long
