Fantastic Yirgecheffe! Best Amazon Coffee Order to date!
We have ordered several Lavassa green coffees and have been reasonably satisfied given the price point. However, where Yirgacheffe is concerned, they don't even come close to the FRC green coffee! I'm surprised the reviews for the other varietals offered by FRC are all mixed together in one review pool. I've only found one other review for Yirge. After having gone through a LOT of different green Yirgees from different distributors, this is the second best I've ever had and it is by far the most affordable! Or at least it was... it appears to have fallen off the Amazon Prime lists since I ordered it and received it... It was the equivalent of $6 per pound. They advertise the beans as Grade 2. I'm not sure what the limit is on quakers in grade 2. In roasting two cups of beans I found maybe 7 or so beans to reject before roasting (bug damage, discoloration or under ripe). After roasting them I probably found 10-12 quakers. That seems a bit high for Grade 2 to my inexperienced self, but that was far fewer than other "good quality" Yirgees I've roasted, especially Lavassa. We like our roast a light as possible while still achieving full bean flavor. 1:20 after first crack has yielded marvelous results with this bean! I've only roasted one Yirge that was better. Floral and citrusy notes abound. The Lavassa Yirge we had to roast quite a bit more just to get any flavor out of it, and we were never happy with the result. So this was cheaper, better quality beans and a much livelier and enjoyable cup than Lavassa. Thank you (ironically named) Fresh Roasted Coffee for such wonderful unroasted coffee! Hopefully by the time we're out, this will be back on Prime at the lower price point. Even if it wasn't (depending on price) I certainly consider ordering it again anyway.

Great Yirgacheffe beans!
As a relatively new roaster, I started with Sweet Maria's and Burman's sample packs which each carry shipping charges. Some decent roasts there but nothing that really impressed. FRC is well reviewed as are yirgacheffe beans generally, so I gave these a shot. Using my Fresh Roast 500, I've found this formula to yield the best results to get to a full city roast: 1 minute on low, 6.5 minutes on high with the fan on high the whole time. Let sit 12-24 hours before brewing. The aroma and flavor once brewed are fantastic, very flavorful with a slight fruity undertone. The only downside to these beans are that they're very chaffy. Even at FC there is still a lot of chaff left which isn't a huge deal and doesn't affect the brew but something to be aware of. I like these better than any beans I got from the aforementioned bean sellers. I may try the Colombian beans from FRC next. I much prefer buying these on Amazon and am glad I took a chance here.

Magical - Delightful - at a dark roast
This coffee comes to life after a dark roast. My first batch was more of a breakfast roast - on the lighter side with a mild, thin bodied flavor, not all that impressive. This has to be where the negative reviews are coming from. Don't give up! For my second batch I let the roast go to city + and I was blown away by the difference. So many wonderful notes, a very delectable, smoky smooth body with fruity tones after each sip. What a treat this bean is, go dark!

Sour and musty tasting
When I opened the bag the green coffee beans smelled a little sour and musty, but didn't think much of it because I thought maybe that's what unroasted coffee beans smelled like. My plan was to start a gallon batch of jujubes mead and let it ferment for two full days. Then on the third day add the five pounds of Ethiopian green coffee beans and let them ferment for three days. I was hoping I was going to smell something like apples, burnt sugar, honey and bourbon notes, but instead on the third day when I had taken the lid off of the fermenter I got hit with unpleasant pungent sour, musty smell. At first I thought maybe I had messed and maybe by adding the green coffee beans to the mead might of thrown off the ph and turned into vinegar. So I did a ph test and got a ph level of 4.5. If the mead turned into vinegar the ph would of been 2-3.5. I had rinsed off the coffee beans dry them for a couple days and then roast them. That eventually ground up some and made a pot of coffee. Hoping the flavor would improve but they did not and their was still a sour musty aftertaste. After rereading some of the negative reviews with a couple other customers receiving rancid green coffee beans. I am pretty sure the mead was not the issue it was the coffee beans I received. If I try fermenting green coffee beans again I will try a different brand and hopefully will have better luck.

I would recommend
Great coffee. Had some strangely shaped and irregular beans but not much. Overall a great value. Most beans are around $13 a pound if bought from a shop, whereas these are a rough $7 a pound. Also smaller than any other beans I've ever roasted, before roasting anyway. After being roasted they grow to a reguar size and make a great full city roast.

I made great tasty coffee yet without burning bitter taste.
I long to roast my own drinking coffee and I final did. The taste was great. From washing green beans, roasting in wok, grinding in stone grinder and Brewing in enamel kettle, a lot of work but the final result was quite enjoyable. By the way I have it grinded in electrical grinder with metal blades and brewed in French press with metal filter the result was different. I always avoid my green tea to contact metal (taste changed). Apparently the same rule applys to the coffee as well. Also wok is the best for roasting any kind of beans or rice for even roasting result. The picture is shown after roasted coffee.

Not high quality beans, would not recommend!
Bean size and shape are varied very widely results in difficulty to have a consistent roasting results! Would not recommend at all. I honestly think those are left over sections.
