I purchased a book by Sue Becker "The essential Home-Ground Flour" book. There is a wealth of information in this book - including using Soy Lecithin Power in baking with freshly milled flour. So I found this product, the packaging was excellent, and the use by date was a little over a year out - which is also excellent. I used the product - It is truly amazing that a tablespoon of this product can make such a difference in the finished product. I made bread on Tuesday and on Saturday the bread was as fresh as on day one. Also there was no 'shrinkage' - as ( I am not an expert - but I think this is because the soy lecithin holds in the moisture so it does not evaporate) - I will purchase this product again from this company. ### ⭐⭐⭐⭐ Product Fine, Packaging Horrible *by R***Y on Reviewed in the United States 🇺🇸 on June 9, 2020* In general I'm pleased with the quality of this lecithin. I use it to make my own non-dairy margarine, and it does the job. My dissatisfaction is with the packaging rather than the product. Not only is the bag designed poorly (with deep crevices), but it is NOT airtight. This has caused moisture to get in which made for bad clumping. Unfortunately I didn't stay on top of this progression until it became really bad. I then tried to put the lecithin through first a flour sifter (big mistake) and then a strainer. Neither worked. I just ended up wasting too much. But it's now in an airtight, plastic container......which I should have put it in to begin with. Lesson learned. ### ⭐⭐⭐⭐ Finally found!
