How do I choose the size I need

Wrap them around your nose and mouth and if can still breathe you need a larger size

Are these socks good for doc martens 8 eyelet boots?

Yes my husband wears them in his work boots.

What size would fit size 14 feet?

I expect the size 12-15 would fit - this size may have been added since your question though.

I wear a size 12, would i be better ordering the larger size?

Yes, the socks are very elastic but appear quite small, so better to go for bigger size.
