Is this red or white fermented tofu?

Technically this should be fermented white tofu. However, it has a chilli based flavoring so it looks red. Hopes this helps.

You you need to refrigerate, how long will it be ok with or without refrigeration?

I do not know for a fact but when I opened it I did refrigerate it. If I am not sure then things go in the the refrigerator. Even if they don't need to be it helps to keep them fresher longer.
