If you use the breather correctly on top, it should be able to let air out and nothing back in.

Its quite large... all you really need for a sourdough starter is a quart or liter jar, a piece of tightly woven cloth and an elastic...

Can I use this for wine?

I don't think so. This jur is made to make sour pickles,beets etc.
