Review: My new favorites knife. A bargain at any price. - This is my new favorite knife. I have over a dozen expensive knives, and as many cheap ones in my kitchen. Now, this is the knife that I am using for nearly everything, every meal. I like the balance, the feel of the handle, the size and the shape and thickness of the blade. It was super sharp out of the box and the sharpness has held up much better than I would expect for a knife at this price point, or any price. I don't know a lot about the steel used, but I'm guessing it's not as fancy as the expensive Japanese or German models, but for me, it performs just as well, or better. If I need to touch up the hone, a couple light passes on a steel or stone and it's as good as new, very easy to sharpen. I liked it so much I gave two away for Christmas to family members, and these have become new favorites for them too. I would buy this again, and I can recommend it without reservation.
