How does it work? Why the two pans? Does it do one omelet at a time? Do you close it and turn it upside down for the other side?

It cooks one omelet at a time. You start cooking your omelet in the bottom pan. When the omelet is almost set, you put the top pan on to close, then flip so that it cooks on the other side. The short handles on the pans fit together. The set closes and fits well and comes with instructions and a short recipe book. Each pan can also be used individually for something other than a frittata.

Is this skillet PFOA free?

http://www.everythingkitchens.com/cuisinart-frittata-skillets-fp2-24bk.html Look further down past the first question and to the 4th question. It corrects a typo and says that it DOES NOT contain PTFE or PFOA

can the pans be used separately

Yes - This is the way we use them most of the time - they are exceptionally non-stick and have become our preferred pans - highly recommended!

can this pan be used on an induction cooktop

No...this pan cannot be used on induction cooktop. I have tried.
