Q: I have the Santoku knife and am wondering why the flutes are on the left hand side of the knife, the slices adhere to the blade.

My understanding is that they are there to limit food slinging to the blade.

Q: Is a left handed knife?

Universal handle. I am left handed and have no issues. My wife is right handed and also uses it daily. It comes razor sharp. Use a sharpening steel 3-4 strokes alternating each side daily, do not cut on glass plates and it will stay sharp. Bets paring knife we have owned.
