Has a good surface texture and a mild flavor. Cooking it brings out a decent amount of starch, so the water can be used in recipes like cacio e pepe that use pasta water as a thickener for the sauce. I've had it a few ways so far and have appreciated that the pasta itself has a little flavor: 1. Topped with a light tomato basil sauce, 2. Olive oil, Crushed Garlic, Grated Parmesian. 3. Cacio e pepe. All good.

I have been so unhappy with the regular store-bought pasta that is only made of wheat no semolina when you get through trying to cook it you have a bunch of water down paste in the bowl in the bowl no more crap pasta for me!
