I use it to fry pastries, ham croquettes, plantains, etc., and it works fine. Hope it helps. **Q: Can this be placed in an oven while something is baking? It says it goes up to 550f, but I would like to make sure if it can or can't.** A: I DON'T THINK THIS COULD GO INTO AN OVEN AT ALL. It is for liquids like boiling oil or candy. I am RETURNING mine because the temperature rod is SO long that I can't see the gauge which faces upwards unless I stand on a stool. I am short. I made candy and the clip is adjustable as to how deep to put the rod but it just stuck up too high. ANOTHER MAJOR PROBLEM was that the temperature is very hard to read because tiny lines are used between the numbers on the gauge. My fudge had to be 234 degrees but we had to guess at it. For hot oil it would not matter so much. I RECOMMEND a Meat Thermometer made for the oven. I am going to try a different style for making candy. Look at a closeup of the temperature readings on this.
