Yes you can put it on a keep warm setting if you want to keep it ready to steam again after a few minutes, or you can turn it off completely inbetween steaming

Would this steamer be suitable for use in a hard water area?

As part of the general care for these you have to regularly descale. I would say if you use it everyday then you may wish to descale more often than suggested to ensure you keep it in good condition, and perhaps think about using purified water? They are excellent machines!

Knob listens and let’s steam out after 1 month of using

The knobs need replacing as are letting out steam . These are supposed to be industrial and we have 4 and all have the same problem. Can you send us replacements asap. I do not see anywhere to request this .
