I have Celiac so I can not tolerate gluten. I know some nut processing introduces gluten, so are these gluten free?

Yes they entirely free of gluten and not processed along with any different foods

Where exactly are Baru Nuts from?

Baru nuts are imported from Brazil, and come from the "Cerrado" biome in the Midwest region of the country, known as the Savanna. They grow in the wild and are collected by being hand-picked by a coop of local families, never cutting the tree.

The ORAC +21,000 count. Is that before or after roasting? Roasting destroys antioxidant values.

The ORAC count of 21,100 (μ mol TE/100g) is after the roasting process. Roasting is necessary to remove all the Phytic Acid from the nut.

Baru Nuts are wild-harvested from the Savanna rather than from plantations. Therefore, our Baru Nuts are organic and non-GMO by nature but unable to be sold with an Organic certificate due to the vastness of the Savanna where the trees grow.
