Why does this grease lack even the most basic ratings (e.g. gc, lb) from the nlgi? will this void oem warranties??

I'm not sure if it would void any warranty but I can tell you that I use this on my quads my vehicles anything with a grease fitting. It is the best in the buisness hands down

Has anyone used this to lube the suspension on a Ski Doo snowmobile?

If it is used for ATV's it must be also good for snowmobiles. It is waterproof & Used in extreme environments for over 25 years. The waterproof technology in green grease acts as a rust preventative and protects bearings, seals and open gears. Waterproof technology repels fresh and saltwater. Go for it.

Does this work in sealed ball bearings, assuming I take off the seals, clean out old oil, and pack the grease in?

I have been using it on my boat trailer bearings for years and no problems. I use it on all my items that need grease.

Is this grease compatible with the petroleum base product that is already in the bearings from the boat trailer manufacturer??

Yes, they advise in their spec sheet that it is "compatible with lithium and petroleum-based greases." I use it on everything now... including my boat trailer. Good stuff.
