Q: Are the handles strong enough to not break when pushing down hard on firm dough while rolling it out?

I only rolled put sugar cookie dough it was not that firm or hard I use a buttermilk sugar cookie dough plus I sprinkled flour on rolling pin to stop dough from sticking.

Q: Does the pin and the handles work independently or are they fixed and roll together?

The pin and handles work separately. You can hold the handles stationary in your hands while rolling the pin over the dough.
