Are these stereo microphones or mono only?

Mono. But you can always pan the voice left or right with your mixer or audio editor.

You show a photo so someone exercising on the floor with you mic, since the cord is only 6ft, please explain how to extend?

I didn't post the picture, but one viable explanation is that the mic coukd have been attached to a small recorder such as a Zoom H6. The sound could then be imported into Final Cut Pro, Premier or other video editing software, then aligned with the video for editing later.
