Flavonoids substantially reduced due to processing
I buy cocoa powder partly because I like to drink hot chocolate, but another factor is the healthy flavonoids contained in the powder. However, when I purchased this I didn't realise that evidence from the literature indicates that when the cocoa is processed with alkali, also known as Dutch processing or Dutching, the flavonoids are substantially reduced, some evidence suggests by up to 60%.The description on Amazon from the company (Sanico) states "on of the highest concentration of minerals and Magnesium on the planet", but it fails to mention the depletion of flavonoids caused by the processing. Also, I'm not sure how the company can call this product "raw", when it's gone through an alkalising process?I should have researched this a little better before buying!
