Worth the Sticker Shock
I recently got back from a trip to Belgium. The chocolate there was unreal. I had never had anything so good. I tasted a waffle with melted chocolate on it and just knew that I was going to have to re-create that taste when I came home. Looking for European chocolate in my area produced mostly small, eating chocolates, and I wanted something that I could melt and bake with. These were pricey, and I was kind of nervous about ordering them in the summer because I was afraid they would be melted. To my surprise, they arrived in a little cooler bag with an ice pack, without one melted chip. Now to taste. I was worried these wouldn’t live up to the hype. As soon as I sliced open the bag the entire room filled with the smell of a magical Chocolate shop. Remember how when you were a kid you’d step into the candy store and that smell of lovely sugary sweetness would hit you when you opened the door? It was like that. I tasted one and it just melted in my mouth so deliciously that I had to close my eyes and say a deep Mmmmmmmmm. The flavor is complex. Fruity. Multi layered. It’s not your average candy bar from the store. This is the real thing. This tastes exactly like what I had in Belgium. The bag is over 5 pounds – so a little bit heavier than a bag of flour. It completely filled a gallon Ziploc bag for me. I’m just over the moon that I can finally get chocolate here with the quality I found in Europe. It’s pricey, but it’s definitely worth it. Use this when you’re baking to impress. Don’t waste its greatness on Frenemies. They don’t deserve it.

Great for Melting!
This is my second order of this product, that is how good and reliable it is. During the usage of my first order I also tried different brands to compare and contrast. While some of the different brands were good for particular recipes and situations, when it came to making chocolate candy, Callebaut melted smoother, with great texture, and set up flawlessly! It has a wonderful flavor profile, and no bitterness at all. So when I ran out making peanut butter cups I knew that Callebaut was the one to reorder. Amazingly, it wasn’t due until Monday of next week, but came today, 3 days early!

Expensive.Well shipped - In a small, foam, cooler, with [melted] ice packs.Timely.I have had over a dozen orders with this company, over the past 36 months.I have experienced many of their struggles and adaptations in the way they ship their, highly, unstable product, by it's own nature.I live in [South] Florida and shipping chocolate, during the summer or any other day under the sun, can be a tricky prospect.There have been some failings. HOWEVER, the product has been timely replaced.I keep doing business with them be3causeA. They have pretty good chocolateB. They are always adapting towards improvement.I do think they need to adjust their prices a bit though.I do follow the commodities market and this company does not fluctuate downwards, based on the lower cost of the cacao bean market(s).The cooler IS nice and reusable - e.g. small quantities of liquid N or dry ice.****ATTENTION SELLER****Try this: Maintain your chocolate - in their 5lb bags - at a lower temperature (68-70F), prior to shipping inside this cooler.I don't think you need the ice pack when you use the cooler but in this way, you DEFINITELY won't need them. Less cost.

Great chocolate for any pastry needs
I fancy myself an at home baker with enough skills to keep friends and co-workers fat n happy. I had long been using a nationally recognized and grocery store available, semi-premium (for the grocery store) California based, company for my baking chocolate needs but a) got lazy at having to chop up the squares for melting, and b) noted like everything prices were going up faster and higher than I was happy with. Amazon does sell in larger quantity the chocolate I was using, but math says the grocery store was cheaper. I ran into these in my search and though oh, this is like those fancy chocolates you see bakers use on the TV/Streaming baking competitions that are like large chocolate chips without the stabilizers. I haven't gone back. Its so easy dipping into the big bag to weigh out my chocolate. I suppose i'd prefer something closer to 60% but the flavor to me is great - richer than a milk chocolate, but still with sweetness. Tasty right out of the bag :). Has worked flawlessly in cakes and brownies, as well as ganache. Just ordered my 2nd bag (takes me about 18 months to use this much chocolate).
