This 20 minute time keeps the Briquettes from being overly heated (charred black but overly burnt). An overly burnt Briquette will emit a very acrid smoke that will ruin the taste of your items being smoked. At 20 minutes, the Briquettes will be used up (blackish looking) but not “Burnt”. **Q: how is this on brisket?** A: I use this primarily. On brisket I presmoke the smoker for 20-30 minutes and my brisket reflects this.
