**Q: How long will it remain fresh if unopened**
A: I had mine unopened in the fridge for six weeks and it remained fresh. Once opened I ate it within the week.

**Q: Is this too soft to use on a grater? Is the recommended method slicing it for pizzas?**
A: Yes I would recommend slicing it or simply shredding it by hand, delicious in pizza form.

**Q: Can it be frozen for a later date**
A: I beleive so as long as you do not make the mistake of pouring out the water as the water around it will help it stay fresh while frozen.

This was similar in texture to what you would get in Italy. On pizza the texture and melt was also great. The taste was like nothing. On a pizza it couldn't be noticed, but even with prosciutto it didn't taste good. It wouldn't be worth it to me to buy again.
