Deep in the Heart of Texas cowboy bean flavor
First bought in central TX for under five dollars for one bottle, then at my grocery store in Memphis for slightly higher price (now their ad shows it (but they never have it in stock), so sad. I use it in my granddad's family pinto bean recipe that is older than 110 years, since his mother made it in her adult life as well. I now have my granddad's well -worn, heavy bean pot that was on the table every dinner (lunch) and supper. The pot dates from the 30's or 40's and has a super thick bottom, perfect for cooking beans. He cooked the beans until mostly softened, then sprinkled ancho chili powder & very strong granulated garlic powder lightly over the liquid surface, a splash of vegetable oil, two or three squirts of ketchup, and three or four vinegary pepper sauce peppers minced fine, & a few dashes of the pepper sauce vinegar, salting only after the beans are soft. I top the bowl when serving with relish made from diced fresh tomatoes, cucumber, thinly sliced green onions with a little of the tender green parts, white onions, diced, garlic powder, onion powder, Cavender's Greek seasoning, red wine vinegar and a light splash of vegetable oil. I recently gave some along with cornbread muffins to a couple of neighbors & one texted me & said that they were the best pinto beans she had ever eaten & wanted the recipe (she is over 70 years young). I told her I would show her since there was no measurements nor written recipe. Fiesta Pinto Bean Seasoning is as close to the original tase as I have ever found. I usually make 2 pounds of dried beans with 8 cups of water & as the water is absorbed or evaporates, I add more because I love the bean juice with crumbled cornbread. Also, when the beans are soft enough, I mash quite a few beans against the side of the pot to thicken the juice. When done, the beans resemble the color of Ranch Style in the can, but the taste of home cooked is as big as Texas & is even better when shared around the table with family. As the bean pot gets lower, the remaining beans thicken & are excellent on tortillas as bean burritos. The pinto bean seasoning is awesome, and I have also ordered this brand's Ancho chili powder since it may well be the brand my granddad used, except his was in a glass bottle with a long glass neck with shoulders, almost like some kind of tonic bottle. We will see what happens. It is my mission to keep this Texas family recipe alive.
