What is the dimension of the wheels screw thread? I would like to replace them with a height adjustable flat head screw.

No idea, we didn't use them in the end, however I wouldn't recommend buying this, the bottom rack broke in under a year and the plastic bits holding the shelves in place are very flimsy....we are planning to get another from Lakeland instead

It says the product is 140cm tall, but there's clearly a large space at the top that isn't usable for drying. What is the height between each rack?

About 18inches. There is a crossbar at the top and we put lighter items over this. It definitely saves putting damp clothes on radiators and gives some warmth to the room you use it in
