Can I use this device with my left hand?

That is how I use it. I'm not certain you can use it any other way.

I don't have use of my right foot/leg. Is it all hand controlled?

Yes. Gas and brake use the left hand. Only takes about 20-30 minutes of practice driving in a parking lot to master the controls. Good luck!

What do I do for right handed use?

I guess you can install it on the right hand side of the steering wheel.

If someone else drives will these be a hindrance to normal operation? Will they need to use the hand controls?

If another person drives the car they need to remove the controls. You can not drive the car if the hand controls are installed.The controls can be put on and off within a few minutes
