The semolina is very fine milled. I immediately made my mother Mediterranean round thin bread with sesame, black and anise seeds. It came out tasty and perfect. The dough was easy to work with. The next day i baked Neapolitan pizza adding half cup of this semolina to 00 flour., the dough was elastic and bubbly. My family loved it. The only thing i would change is the semolina to be made with only “durum wheat” without the Enriched ingredients added to it. I’m sure those additives are somehow changing the texture. Needless to say i highly recommended, will be purchasing again. Oh i forgot:: i bought it in Aug 2026 and the expiration date is July 2028. I also add a little to my pizza dough. The flour is fresh with a nice texture, and an expiration date well into the future. The bags ae easy to open but sometimes won't seal correctly, so I always store opened bags in a gallon zipper bag.
