In my experience, these are good quality cables that have successfully reduced some of the noise in my chain. Sounds quality is good, as expected.

Can I use this to connect my Adam audio speakers to a Scarlett 2i2 interface?

As long as they have xlr three pin speaker outs, there should be no problems.

Can I run my guitar to my interface for recording?

Not with that cable. You need a mono T/S jack for your guitar, and if your interface has only XLR inputs, ie expecting (much lower) mic.. level into them, you need a DI box although you might get away with a hefty input pad on that channel if the interface has one.
