I can't believe there seems to be no way to record directly into the folder you want! You have to move the file manually after recording? Seriously?

That is correct. Because when you record, everything goes into the memory or SD card that you inserted. Then you must connect to a computer if you want to download the files onto the computer. Otherwise, everything (files) are keep on the device and or SD card. Makes sense to me.

I'm not sure Sony has a recorder to pick up Electronic Voice Phenomenon from ghists or spirits but there's an app for that, I'm sure.

how difficult is it to replace the rechargeable lithium battery, if needed?  is this possible to do so without sending the unit in for service?

You can replace this battery yourself. However, doing so could damage the recorder and would likely void any warranty.
Although the battery has no identifying numbers on it the paper work that it comes with indicates its a 3.7v rechargeable lithium-ion battery (not lithium polymer) as the listing shows.
Regardless if it's lithium-ion or lithium polymer if you get one that's rechargeable at  3.7v @ 500ma consumption, and it fits in the alloted space, it should work.
I highly recommend that you don't try to replace this battery unless you are a skilled technician.
