Alexandros ensures his bees are protected during the winter months then moved during spring and summer to areas where conifers grow in abundance. A luscious dark golden colour with a gorgeous waxy consistency. We loved the subtle pine and fir flavours, the perfect level of sweetness. Complex, fascinating and 3 dimensional. On occasions the honey may crystallise, this is nothing to worry about, in fact its a clear sign of a natural, unprocessed product as only pure honey will do this. To melt the crystals simply place in a bowl of warm water. Spread it on a warm slice of toast and use in marinades & baking. Real Honey - the healthiest nutrition ever and great for some menopause symptoms. (Have a look for the studies) Odysea Honey- next best thing after my late stepdad's Austrian mountain forest honey. Was initially cautious, given honey is widely available in supermarkets. It fully crystallises eventually and that is always the ultimate test to distinguish between approx 50 percent of fake supermarket honey and real one. This is the real deal. Pine fir tree has the lowest amount of sugar of all honeys, the taste is delicious. My personal preference is oak but majority of people in general would prefer pine fir tree, lighter in colour and slight different consistency. I'd order both and taste ;). As you can see I am not a reviewer, who got a freebee. Just someone who LOVEs good honey. Customer Service is also spot on, despite having bought via Amazon. Great company and a knowledgeable, helpful technical manager - Mr Spyridis certainly knows honey ;)....
