Will using this spray on my mattress make my dog not want to sleep or lay on my bed with me?

I don't think it will work for that.

Does this keep the dog away from the area altogether or does it only keep the dog from peeing in that location? Looking for something to use in crate.

It keeps them from peeing in the location. It does have to be repeated to be effective. If your crate is too big the dog will go in it. Try blocking off part of the crate. Dogs generally won't go where they sleep.
